After a bit of speculation and generic “Bucktown” references from other local blogs, we got the scoop on the location for The Bristol, the highly anticipated collaboration between former one sixtyblue GM John Ross, former N9ne GM Phillip Walters and chef Chris Pandel, an alum of NYC’s Café Boulud and Rick Tramonto’s arsenal of eateries. The Bristol will open in the former Il Covo space (2152 N Damen Ave) in mid-September. Il Covo will serve their last meal tomorrow.
Bristol stuff Im psyched for includes:
* A bar snacks menu of things like dill and sea salt “monkey bread” pull-aparts
* A “5th Quarter” charcuterie chalkboard, listing house-cured sausages, smoked terrines and roasted marrow bones
* A brunch menu (slated to start in October) that includes biscuits with honey butter and sausage gravy
* Entrees that average under $20
* A cocktail list by star bartender Debbie Peek that ranges from Moscow Mule era classics to seasonal, contemporary creations like a pear and elderflower combo
* A wine list packed with biodynamic and organic picks
&and six taps pouring local brews, one dedicated to cask ale.
